Thai Chicken and Prawns (Pad Thai)
Ingredients:
2 boneless chicken breasts, skinned
2 tbsp soy sauce
2 tbsp oyster sauce
1 onion
3 garlic cloves
2 spring onions
1 red chilli
1 lime
150g unsalted cashew buts
3 tbsp vegetable oil
225g prawns
150 ml chicken stock
4 sprigs coriander to garnish
salt and pepper
Method:
Slice chicken breasts into strips and add the sauces and leave it to marinate for a few minutes
Chop the onion and finely chop the garlic. Finley chop the chilli and chop the spring onions into rings.
Heat the oil in a wok and the chicken slices
Add the onion, garlic and chilli add the prawns and fry briefly.
Pour in the stock and simmer for 2 minutes
Add pepper and salt
Sprinkle cashew nuts and garnish with coriander
